Rice Pilaf with Peas
Ingredients
- 1 (15.0 oz.) can of No Salt Sweet Peas, undrained
- 4 tbsp. unsalted butter
- 2 shallots, minced
- 1 cup brown rice
- 2 tsp. chopped parsley
- 1/4 tsp. black pepper
- 2 - 1/2 cup chicken broth
Melt butter in saucepan. Add shallots; saute until softened, about 5 minutes. Add rice, stirring to glaze. Add parsley, pepper, and broth. Stir and bring to boil. Reduce heat, cover, and cook about 45 minutes. Heat peas in separate saucepan; drain and mix with rice.
