Sausage, Bean & Red Cabbage Salad


Ingredients

Sausage, Bean & Red Cabbage Salad
  • 1 (16.0 oz.) jar of Sweet & Sour Red Cabbage, drained
  • 1 (14.5 oz.) can cut wax beans, drained
  • 6 cups (8 oz.) pre-washed torn mixed salad greens
  • 1-1/2 cup diced turkey smoked sausage
  • 1/2 cup poppy seed dressing
  • 1/2 cup prepared croutons

Arrange salad greens on 4 serving plates. Cook sausage according to directions and slice. Arrange cabbage, wax beans, and sausage in rows over greens. Drizzle with dressing and place croutons on top.

Italian Cabbage Soup


Ingredients

Italian Cabbage Soup

  • 1 (16.0 oz.) jar of Red Cabbage
  • 2 tsp. olive oil
  • 1 medium bell pepper, diced
  • 2 tsp. fresh thyme, chopped
  • 2 garlic cloves, finely chopped
  • 4 cups chicken broth
  • 2 cups water
  • 1 cup dried cheese tortellini
  • 1 (15 oz.) can Great Northern Beans, drained and rinsed
  • 1 medium zucchini, quartered lengthwise and sliced 1/4 inch thick
  • 1 small tomato, chopped
  • Salt and black pepper, to taste
  • Shredded Parmesan cheese (optional)


Drain cabbage well (reserving 2 tbsp. liquid); set cabbage and liquid aside. Heat oil in large 4-1/2 quart pot. Cook bell pepper, thyme, and garlic 3 to 5 minutes or until pepper begins to soften. Add broth, water, tortellini, and beans; bring to boil. Reduce heat and simmer partially covered for 5 minutes, stirring occasionally. Add zucchini and continue simmering, partially covered, until zucchini and tortellini are just tender, about 5 minutes. Stir in cabbage, liquid, and tomato; add salt and pepper. Sprinkle with Parmesan, if desired.

Red Cabbage & Sausage Skillet

Red Cabbage & Sausage Skillet

  • 1 (16.0 oz.) jar of Red Cabbage, undrained
  • 4 petite red potatoes, unpeeled
  • 1/2 lb. smoked turkey sausage, diagonally cut into 4 pieces
  • 1 small red onion, cut into wedges
  • 1 tbsp. caraway seeds


Cut potatoes in half; place in large skillet. Add enough water to cover potatoes; cover and bring to boil. Reduce heat; simmer uncovered 8 - 10 minutes or until tender. Drain and set aside. Place sausage in skillet and cook 2 minutes over medium heat, turning occasionally. Add onion; cook uncovered until onion is tender and sausage is lightly browned, stirring occasionally (approx. 3 - 4 minutes). Stir in cabbage; bring to boil. Reduce heat and simmer uncovered 10 minutes. Add potatoes and heat through. Sprinkle with caraway seeds before serving.
